Getting value out of Corn can be tricky, as the humble cereal crop isn't particularly profitable. However, it's one of the few crops that can be grown across two seasons and can be harvested multiple times. Multiple harvests across Summer and Fall allow you to turn a decent profit on this crop, even though it's not particularly stellar in of pure profit.
Corn is also one of the best crops to include in Stardew Valley's Community Center bundles. You can fill a slot in the Fall Crops and Quality Crops Bundles with Corn, bringing you a few steps closer to completing the Community Center.
As a multi-season crop, Corn also won't die when Summer ends. Having a small patch of land dedicated to growing Corn means that you won't have to start replanting your whole farm from scratch at the start of Fall. A Sunflower may seem like a waste of money to grow, considering how little it sells for compared to the cost of its seeds. However, those who make Sunflowers will quickly realize that the flower is self-sustaining, producing 1-2 Sunflower Seeds every time you harvest a grown flower. You only have to buy Seeds once before you get enough seeds to grow another, and another, and so on.
Like many flowers, Sunflowers are great gifts for villagers. Haley, in particular, loves Sunflowers, so you can deepen your bond with her if you gift her one during the Fall season.
Sunflowers are used in two separate bundles, allowing you to earn rewards from their growth. While Sunflowers also grow in the Summer, you can grow them early in the Fall to place them within range of a Bee House building. Flowers are often loved gifts for Stardew Valley's twelve marriage candidates and other villagers, and fields of flowers can make your farm look rather picturesque. Unfortunately, they're not cheap to grow and don't sell for much. On paper, the Fairy Rose fits the description perfectly: high seed cost, low sell price, and an average margin between the two.

What makes the Fairy Rose shine is its utility for making Honey. By placing a Bee House within five squares of a Fairy Rose flower, you can produce Fairy Rose Honey. In your second year in Pelican Town, you'll notice that a few extra types of seed can be purchased. This includes Artichoke , a simple vegetable crop that can be grown and harvested in eight days and sells for 160g. There's a good balance here; it doesn't take too long to grow and still sells for a good value.
If your farm is set up with Preserves Jars, you can place Artichokes inside them to create Pickles, a valuable Artisan Product. Pickles sell for less than Wine and only take a few days to process.
As such, you can use it as a staple cash crop, allowing you to earn some Gold regularly while working on bigger farm projects. Artichokes are fairly straightforward, and unlike the Fairy Rose, there aren't any hidden products you can make with them. One of the easiest and quickest fall crops in Stardew Valley is Wheat . It's not a good idea to sell the raw harvest, as the profit margin is ridiculously small and not worth it, but wheat is a useful crop for making other goods to sell and use. Use wheat to feed your animals or to create other useful goods like flour. Wheat flour is a key ingredient in 20 different recipes, which provide stamina and health refills as well as occasional buffs. Plus, if you use a scythe to cut the crop down, there's a 40% chance of harvesting hay along with it.
The real profit from wheat comes in the form of beer, which sells at a base price of 200g (and up to 560g for a high-quality, artisan version). It only takes 1–2 days to turn wheat into beer in a keg, bringing the profit per day from a measly 3.75 to a much more impressive 45.5g per day at the lowest end. This still pales in comparison to the other profit margins, but if you produce high-quality beer, you can turn a pretty quick profit. This, combined with the extremely low price of the seeds, makes wheat a surprisingly good investment for farmers in autumn.

Amaranth is a basic grain crop with a single advantage: it's harvested with a Scythe rather than by hand. Because of this, it's far less time-intensive, and you can easily harvest and replant it in half the time. After your first year in Pelican Town, Amaranth is a particularly good crop choice, as you need to start dedicating more time to other activities such as fishing and mining during later years.
You should also grow Amaranth in your first year, as Marnie, the rancher, will send you a letter on the third day of Fall requesting some for her cows. Marnie sells some of the best animals in Stardew Valley and will also send you recipes, so it's well worth helping her out with some local produce from your farm.

Yam is another straightforward crop with a variety of uses, whose seeds you can get at a relatively cheap price. Making Yams may take some time, but the ratio between how cheap their seeds are and their sales price makes them extremely easy to invest in.
Using the right Artisan tools can easily turn a normal Yam into something that sells for almost double its base selling price, requiring only 60g for seeds for nearly 200g or more when the crop grows.
Any Yam you produce has a variety of functions outside of being sold for profit. Yams can be used in the Fall Crops bundle alongside Eggplant, Pumpkin, and Corn. Completing this Bundle will reward you with a Bee House, which can quickly be transformed into another important location on your farm.
