Even here in reality, we have similar naming conventions. Japanese custom, for example, is to put the family name first.

And seeing as how Star Wars is so strongly inspired by classic Japanese cinema, and The Mandalorian is giving off strong "Lone Wolf and Cub" vibes, it seems almost aporopriate.
